Easy Overnight Chia Seed Pudding

I love this recipe because it’s healthy, delicious and so easy! It takes less than 5 minutes to make the pudding and less than five minutes to prepare your bowl when you are ready to eat.

It’s also vegan, gluten and dairy free, and packed with tons of vitamins and nutrients.

Ingredients:

1/2 cup Chia Seeds

2 cups Almond or Coconut Milk

Slivered Almonds

Blueberries

Directions:

Add 1/2 cup chia seeds to a mixing bowl.  Pour in 2 cups of almond or coconut milk.  I prefer almond milk as I find coconut milk very sweet.  I use vanilla almond milk but you can use unsweetened and add in your own flavor.

Stir.

Let bowl sit on the counter for 5 minutes.  Chia seeds can absorb up to 6 times their volume in liquid, pretty amazing!  Pretty soon you will have pudding!

In 5 minutes, stir again.  You will notice lots of clumps of chia seeds as they start absorbing the milk.  It’s a pretty fun process, as they absorb the milk very quickly (in a pinch you can eat this in 20 minutes!).

At this point I add slivered almonds and blueberries.

Other options: raspberries, blackberries, strawberries.

Flavoring: vanilla, cinnamon, nutmeg, maple syrup, crushed dates (bonus if the dates are in your almond milk!)

To Prepare Your Pudding:

When the pudding is ready, add it to a bowl and top with:

Honey, sliced bananas, strawberries, more blueberries, raspberries, blackberries, coconut, almonds, pistachios, dried cranberries or other fruit.

For this bowl I sliced banana and strawberries, added sliced almonds and coconut, honey and dried cranberry and fruit mix from Trader Joes.
